"Sheep's milk runners"? Esther and Christophe were so eager to do so that in May 2018 they started breeding dairy sheep on an ecological farm. In their little paradise, they make yoghurt, curds, cottage cheese and organic and farmhouse sheep's cheese. The small flock is made up of Lacaune ewes, fed on meadows and organic cereals. The morning milking is directly processed on the farm according to traditional recipes. The two new breeders have developed their range of cheeses in three different ways: raw milk palets and pressed raw milk tomes matured in cellars and finally the brousse, a fromage frais.
