Catherine left Paris to realize his dream in Castres: open a "real pasta bar and salad bar" (and soups in the winter). The first surprise is the great kitchen, the second is the small, minimalist and minimalist restaurant room. Behind the counter are small artichokes of Puglia, grilled aubergines, curry chicken and honey… Pasta sauces are home-made; the pesto, for example, is made on the spot every day. Pomodora pastes and their grout grout are used for fresh goat, nut and rocket chèvre. Finally, difficult to withstand the collapse of raspberries or homemade caramel cream!
