Thierry Lair has succeeded in harmonising distant flavours with the great classics of the region in a contemporary setting in L'Isle-Jourdain.
The resolutely contemporary setting of this gastronomic brasserie echoes the modern bias of the menu. Thierry Lair learnt his trade with Bernard Bach, the two-starred chef from the Gers. This is evident in the finesse and originality of his creations, which revisit the great classics with flavours from further afield. The inevitable foie gras from the Gers is accompanied by a coulis of piquillos with white Floc de Gascogne. For the main course, we liked the meeting of game and Indian spices with the filet mignon of wild boar spiced up with Tellicherry pepper.

Un regret ce que je croyais être le plat "signature" a disparu de la carte. !!!! Et pourtant le pied de cochon désossé et farci au même pied de cochon est ou était une tuerie.
