Restaurant offering magnificent dishes with fresh, local and exceptional products
The Delphinium is one of the great tables of Valras. Behind her stoves, the chef Evelyne Deroche, Master Restaurateur, works with fresh, local and exceptional products in order to propose magnificent dishes to her customers. For example: fish sauerkraut with Nantes butter, veal grenadin from Ségala, pan-fried foie gras, followed by a nougat glazed with garrigue honey or a chocolate sweet. Note that the fish cooked here are wild. The menu offers a wide choice of wines from here and elsewhere to accompany the meal.
