Starred address opting for exceptional products and organic wines
Tine Claeys and Marc Verstraete are the driving forces behind the transformation of Assignan into a marvellous landmark. Their love at first sight for Château Castigno led them on the path of taste and the development of the terroir. After restoring the historic estate and its vines, the duo developed a project around the flavours of the land and disconnection. They put their energy and colourful style at the service of several accommodations, an extraordinary cellar and three tables, including the starred Table de Castigno. In the kitchen, the score is played by two Belgian brothers, Pieter and Ruben De Maesschalck. These two talents have worked all over the world, including with Michel Bras and 't Zilte in Antwerp, and have demonstrated their virtuosity. In this setting that mixes old stones and Parma tones, their four-handed cuisine navigates between exceptional products, matured meats, organic raw materials from the estate and Nordic touches.
