Between Castelnaudary and Revel, the small village of Peyrens has a very beautiful establishment in Lauragais, the restaurant of Philippe Solovieff, Peer of the Great Brotherhood of cassoulet in Castelnaudary, which will swing your taste buds with his ceps salad, his vegetable mille-feuilles with fresh coriander, his trio of duck with black figs, his pigeon morels with its reduction Fitou ... his home dessert as well as his bread and of course his wonderful cassoulet desserts.
