Although Fabienne's farm is located in Trèbes, it is a few kilometres further, in Floure, that you have to go to taste her olive production and leave with a few bottles. The mill can extract up to 5,000 litres each year. Its oils come in 5 monovarietal extra virgin, sweet and fruity productions, as well as two oils flavoured with basil and lemon. The cuvée Thomas (named after his son) is a blend of olive, verdale, clermontaise, aglandau and picholine. Fabienne also makes table olives with her lucques.
