Heir of the family business founded in 1890, René Salasar makes Blanquettes de Limoux whose reputation extends beyond the borders, at Domaine Beausoleil. The blanquette is prepared from grapes harvested by hand in the Salasar vineyards that grow over 60 hectares at high altitude, on the cretaceous strata of Haute Vallée de l'Aude whose cool climate delays the ripening of the grapes. The rigour in the vine-stock work, associated with careful winemaking, give their wines a remarkable authenticity. You should note a beautiful pallet of cremants and blanquettes-including the must of Salasar, a prestigious crude wine-and a remarkable chardonnay "Domaine Beau Soleil". In 2013, Maison Salasar joined the Bonfils vineyards whose wine heritage already has 17 estates and castles in Languedoc-Roussillon and 3 in Bordeaux one. The Bonfils vineyards have been more seduced by the quality of the effervescent products by Beausoleil, and by the knowledge to make and the fame of the Maison Salasar which remains one of the producers of bubbles - blanquettes and cremants-the oldest ones of the sector.
