A must to taste the cheeses of the region such as the Chevillon double cream or the Domaine de Vallage triple cream, a soft cheese whose long conservation is due to a well-kept manufacturing secret. Here everything is done by hand, from ladling the cheese to turning it over by hand. The milk, collected from a dozen producers, is re-fatted as soon as it arrives in the tank, an addition of cream which gives it its incomparable smoothness.
