There are few establishments similar to Saint Paul's. This sublime building and its adjoining chapel have survived through the centuries, steeped in history to the rhythm of sunrises and sunsets overlooking the coasts of the port of Nice. Now in the middle of renovation for more than two years, the establishment does not disavow its history.

From the Seminary House to Saint Paul

This establishment, which was created in 1840 to accommodate the seminaries of priests, has been constantly embellished since then, notably by Monsignor Rémond who, in 1931, made it the vast house with the pink facade and green shutters that we know today. Since 2014 renovation work has been decided by the bishopric and under the impetus of the bishop. Sylvain Boutain, the current director of the Hotel-Restaurant has therefore followed this dynamic of renewal to restore the lost vitality of Saint Paul. The restaurant on the ground floor has since been completely renovated, but it will take until 2018 for all the rooms to be fully renovated.

The arrival of a new leader

The restaurant has also been completely refurbished. It is in this rejuvenating dynamic that Chef Sauveur INSERRA, a native of Nice, joined the kitchens of the Saint Paul, "The Saint Paul is a privileged place in which I feel a real pleasure to be able to bring my know-how. My ambition is to be able to make it one of the best tables in Nice. ", he tells us.

This culinary artist follows in the footsteps of the great chefs who place the utmost importance on the freshness and taste of their products. You will find in your plates only seasonal dishes, cooked simply so as not to distort the flavours.

But for several centuries, what makes the real singularity of this establishment is its breathtaking view of the Mediterranean. Certainly one of the most beautiful of the French Riviera dare to say a few customers. For these guests, the hotel's private car park is also a major asset for this area, which is poorly served by public transport and where parking spaces are scarce
