Teuteun is a very special delicatessen product from the village of Gignod, which has been made for centuries. It is now the protagonist of the homonymous festival that is held every year in mid-August. These are "cow's udders" in Valle d'Aosta, put in brine with sage, bay, rosemary, juniper, spices and salt, which macerate for a fortnight before being cooked in a bain-marie. Seasoned with parsley, olive oil and garlic, they are eaten with fig, raspberry or pear jam, especially on the day of the festival.
