There are "home-made" viennoiseries, but the most famous are the sablé and the famous Saint-Pée brioche. The latter is the fruit of the imagination of Cédric Béchade (Auberge Basque) and Beñat Darrigues, with a combination of brioche dough, walnuts and membrillo, quince paste, to become a cake!
