If Holen rhymes with Molène, this Breton island off the coast of Brest, it is because when you disembark in Rennes in this starred restaurant, the stroll will take you much further in Brittany. Holen is salt in Breton. Before arriving on your plate, each dish draws the best from local producers and is matched with a good wine, often biodynamic, always under the benevolent eye of the chef Tugdual Debéthune. The atmosphere is serene, we adopt the art of hygge living, every detail is carefully studied, from the cutlery to the armchairs and candles.
