Fayyar is a microbrewery created in 2020 in the heart of one of the great wine villages of the Auxerrois. Simon, Romain and Élise offer you their organic and local beers. Do not hesitate to go and taste them; they are worth the detour! Above all, you can also visit the place and discover the work of these young and friendly brewers. By appointment, they will show you the raw materials used, but also all the stages of production along their beautiful cellars of the XIVth century. With a tasting at the end, of course!

LA FERME D'ULTERIA

At the exit of Saint-Bris-le-Vineux, near the cellars of Bailly, there is a goat farm that you must visit. Created by the very sympathetic Claire Genet, it proposes cheeses (100 % organic obviously, and made under our eyes!), but also a delicatessen composed of products coming from local producers. But you can also come and have a picnic, go for a walk with the goats, follow workshops (for example, on how to make goat's milk soaps). And animations are regularly organized for children (but not only!). A favorite.

DOMAINE PIERRE-LOUIS ET JEAN-FRANÇOIS BERSAN

The Bersan estate has been renowned (not only in France!) for... 20 generations! Here you will discover magnificent cellars dating from the 11th and 13th centuries, and its 500 m² labyrinth. There, you will see bottles absolutely everywhere, and you will appreciate the incredible vaults that the family has cleared to honour this little known heritage. Many wines are on offer: Côte-d'Auxerre white, red and rosé, Saint-Bris, Irancy, Chablis, crémants and ratafias. A must-see!

Dating back to the 11th and 12th centuries, these magnificent cellars are a must-see! A family pride perpetuated today by Jean-Louis and Jean-Christophe Bersan, who cultivate 22 ha of vines. They produce several appellations, including Côtes-d'Auxerre, Aligoté, Saint-Bris and Chablis for the whites, Côtes-d'Auxerre, Bourgogne and Irancy for the reds, as well as Crémant and Ratafia. Not forgetting, of course, old Marc de Bourgogne.

DOMAINE GRIVOT-GOISOT

Everything here is steeped in history. The Goisot family already owned vineyards in the 15th century. However, it was in 1947 that Serge Goisot launched production. Since then, this passion has been passed down from generation to generation. Anaëlle Goisot and René Grivot now produce (on 27.5 hectares) Chablis, Chablis Premier Cru, Saint Bris, Côte d'Auxerre, and Bourgogne Aligoté. The Domaine has been awarded the Haute Valeur Environnementale label. And its Saint Bris Héritage "Cul Rouge" 2020 was awarded the Gold Medal at the Concours Mondial du Sauvignon 2022.

Since the estate was founded in 1690, generations have succeeded one another, always cultivating unparalleled standards. Today, Domaine Félix farms 32 hectares in the Saint-Bris, Irancy, Auxerre and Chablis appellations. As for its track record, it's more than rich! For example, his Irancy La Grande Côte Est 2020 won a gold medal at the Concours Général Agricole de Paris 2023. As for the Bourgogne Côtes d'Auxerre Rouge 2020, it was a "coup de coeur" and 2 stars in the Guide Hachette 2024. And the same goes for Saint-Bris Cuvée Sainte Claire!

David Paris has taken over the business run since the late 1950s by Michel Depardieu. The Domaine Fillon has specialized in vineyards for many generations. The estate consists of 37 hectares and offers Chablis and Côtes de l'Auxerrois wines (white, red and rosé). Chablis Premier Cru "Les Beauregards" and "Montmains", Chablis, and Petit Chablis are offered. And, on the Auxerrois side, a Saint-Bris, a Bourgogne Blanc and a Bourgogne Côtes d'Auxerre as well as a very good ratafia, and grape or cherry juices... all homemade! This estate has splendid cellars from the 11th to the 13th century. Here, the production is certified in organic farming, and in biodynamics which respects the lunar calendar. Among the whites, there is burgundy aligoté, côtes-d'auxerre with a traditional cuvée, a cuvée Corps de Garde and 3 climates: gondonne, biaumont and gueules de loup. It also produces saint-bris and saint-bris Corps de Garde. Without forgetting an irancy les mazelots. A very beautiful panel of Auxerrois wines!
