At L'Aspérule, the cuisine of Michelin-starred chef Keigo Kimura (now back at the helm of the Dijon establishment) has given way to that of Hidechika Kuritao. However, it's still a journey into the land of flavors, between French gastronomy and Asian traditions, in which you'll take part. On the evening of our visit, we feasted on an œuf Ajitama meurette, a filet of sea bream, its bourride à la sétoise and Jerusalem artichokes, finishing with candied clementines with coffee ice cream and mascarpone cream.
