Since 2014, Jean-Guillaume has run this 25-hectare family estate in the company of his oenologist wife, Céline. Working the soil is paramount for him, who is keen to develop his wines, which have been certified organic since 2021. The estate's terroirs - Grands Crus Kirchberg, Altenbgerg and Grossberg - are highlighted by wines of undeniable quality. To taste: Pinot Noir Osmose aged 12 months in oak barrels, with a lightly woody nose and silky mouthfeel. Or Pinot Gris Clos Ribeaupierre, with its fine, mineral nose and rich, fresh mouthfeel.

Since then, the passion hasn't waned, and it's a huge concept store that you can visit in Ribeauvillé to enjoy an immersive experience in the colorful, playful Willy Wonka-style store, in the brand's colors (orange and brown). Workshops and demonstrations are organized all year round in the dedicated Choco'Wahou area, focusing on hand-crafted chocolate bonbons. A real treat!

In 1785, Abbot Grandidier mentioned in one of his alsars that a mysterious source appeared and disappeared for several centuries in the region. A century later, in 1888, this phenomenon will stir up the curiosity of Dr. Staub, who will eventually find his provenance. He then decided to create a thermal establishment that he chose to call Les Bains Carola, in tribute to his wife Caroline. In 1890, the first bottles of this medicinal water were found in drugstores and pharmacies. But it was not until 1919 that Ribeauvillé's Mineral Waters Company was created to commercialize the famous Carola Rouge (carbonated water), which will be joined by the Carola Bleu (its flat version) in 1955. In 1989, Carola Rouge became the first gas water to be packaged in plastic bottles. 4 years later, an innovation complements the range; This is Carola Green, finely sparkling, followed by the launch of the flavored waters in 1999. In 2013, Carola celebrated 125 years of undisputed and undisputed success: its mineral waters occupy a prominent place on the Alsatian tables. Sébastien waited until he was 33 years old to create his 3.2 ha estate: Le Clos Liebau. Designed as a wild garden, it is certified AB, the vines are cultivated in permaculture, without using sulfur or copper. You will find wild trees and chickens installed in the middle of the vines to sanitize the plots. Other animals are in the vineyard and on request, your children can greet them! Sébastien produces cuvées that are not lacking in character such as the Soley Kouché, a blend of maceration with a fruity nose and a sparkling mouthfeel.
