The concept may be in the air, but opening a restaurant inspired by gastronomy and vegetarianism is a daring bet. Betterave illustrates this commitment and goes even further. The kitchen, open to the dining room, accompanies your meal and lets you anticipate the best. The plates are delicate, like the poached egg, puffed buckwheat and mushroom foam, surprisingly greedy with candied beets and sunflower praline, and more than surprising with a radish and yogurt sorbet. One thing is sure, our taste buds were turned upside down! A unique formula for lunch, which has the advantage of including a drink and coffee, and a surprise tasting formula in the evening.
