Operating since 1987 in this mid-19th century house, his creations include Point d'Alençon (a crunchy caramel ganache flavoured with green apple), the traditional Bouchon (a roasted almond praline), Diamond d'Alençon (a confection) and Croustillant de Sainte-Thérèse. A prize-winner at the Salon du Chocolat, this chocolate adventurer has been honoured three years running by the Croqueurs de Chocolat national club, and won an award for his BeanToBar Ecuador bar (milk chocolate). He also offers a workshop for chocolate lovers.
