You will be seduced by the semi-cooked foie gras from the Landes with almonds, a variation based on plums and his homemade brioche, the fillet of féra from Lake Geneva cooked on one side, creamy lentils from Petite Grave with tarragon, or the fried sweetbreads and melting calf's heads, a bouquet of stewed vegetables, coffee emulsion and his hazelnut tuile. To finish in beauty, the chocolate flowing biscuit, pineapple chips, fresh coconut and small Pina Colada cocktail. A poem with a thousand flavours.
