It revisits and lightens the dishes of the Valle d'Aosta and Italian tradition. It goes without saying that the raw materials are sourced from small, first-class local producers. The rack of lamb from the mountain pastures raised under the mother in crispy breading, with a mountain herb and beetroot juice, was fabulous.
