Gaiole has been a place of trade and commerce since the Middle Ages, and still retains this activity today. Its funnel-shaped main square, designed to facilitate the arrival of goods, demonstrates the town's merchant origins. The market is held every second Monday of the month, accompanied by popular festivals between June and September. The productive activities are: extra virgin olive oil, wine and local products, such as sausages made with Cinta Senese (a rare and tasty local breed of pig). Finally, you should know that it was here that Baron Bettino Ricasoli perfected the formula for the vinification of Chianti Classico in 1872!
