Normandy, land of fruit and delicacies. Its apple trees, its bocages... An association of professionals, the IDAC, is mobilised to promote the regional tradition. It also defends the honour of calvados, pommeau, cider and perry. The IDAC is the interprofession representing the sector of cider appellations of controlled and protected origin (AOC and AOP). It has several missions: market studies and analyses, improvement of production and sales conditions, promotion in France and in the world, product traceability, age control and ageing (essential for a good calvados!).
When you know that a good pommeau must age for at least 14 months in oak barrels, and a calvados for at least two or three years, it is good that the profession is supervised. So don’t be mistaken... There are three AOCs for calvados: Pays d’Auge and Calvados, which date back to 1942, and Calvados Domfrontais, recognised in 1997. As for pommeau, choose the AOC Pommeau de Normandie. Finally, for ciders and perries, the AOC-AOP Cidre du pays d’Auge and Poiré Domfront. These are the guarantees of a high-quality tasting!
A little reminder and history. Calvados, this brandy that is drunk in a cup of coffee that is not quite finished and still hot, or in a duck (a sugar cube dipped in it), is the product of the distillation of cider. The first mention of this brandy appears in the 16th century in Mesnil-au-Val, by Gilles de Gouberville.
