The company has been producing cheeses for over 75 years, including 1608, a cow's milk cheese with a 3-6 month maturing period; Hercule de Charlevoix, a typical cooked cheese with a dark yellow, hard, grainy texture that melts in the mouth; Fleurmier, a soft cheese with a bloomy rind; cheddar à l'ail noir de l'Isle; fondues (including gin fondue); and much more. It's also an interpretation center where you can learn about the various stages in cheese-making, with demonstrations of old-fashioned equipment.
