Among the must-try dishes: perfect egg at 64°C, coquillettes risotto and truffle cream, beef filet from Aubrac. The local products are of high quality, Paula and Peter Dance for the vegetables, Auvergne marée, Boucherie Challier, Charcuterie Laborie are among the partner producers. The setting is pleasant: design room and terrace overlooking the Place de la Victoire and the cathedral.
