The Consell Regulador Denominació d'Origen Queso Mahón-Menorca is an organisation that was set up in 1985 to ensure the authenticity of Mahón-Menorca cheese (D.O.C. - Denomination of Controlled Origin). It is in charge of controlling the quality of the production and marking all the pieces. The cheese, made with whole cow's milk, is nowadays produced in about twenty farms. There are three types: soft, semi-dry and dry.
