Since Roman times, Coubon has been a strategic crossing point on the Loire River in the direction of Avignon. The first church would have been built there in the 11th century. Integrated in 1229 into the kingdom of France, the Velay is regularly shaken by power struggles between nobility and bishops. In the 17th century, Coubon consisted of 19 houses, and several mansions. A century later, the French Revolution redraws the commune, it integrates then Bouzols, Latour, Volhac and Charentus as well as certain parts of other territories. At that time there were 2,200 inhabitants. At the beginning of the 20th century, Coubon developed thanks to the establishment of the Fileries de la Darne producing the thread necessary for the famous lace of Puy. The operation of the factory required the construction of the Charentus power plant, which is still in operation. At the same time, the construction of a railway line between Le Puy-en-Velay and Langogne boosted the economy. Today, Coubon is part of the 28 communes of the agglomeration community of Le Puy-en-Velay, it counts 38 500 inhabitants and it keeps many vestiges of its past.
