Chef Bjorn Chen is a star in Singapore, especially since he became a judge on the local edition of Masterchef. He revisits the great classics of Middle Eastern cuisine with a very personal twist. Babaganoush is served with yoghurt, fresh pomegranate and teriyaki sauce, hummus is grilled, chicken is fried like in Asia, but seasoned with zaatar and honey. The only respect for tradition is to serve the dishes in the form of mezze, small portions to be shared between all the guests.
