This Franco-Japanese fusion restaurant is run by chef Jeremy Chiam who has perfected his art with the greatest chefs, both in Paris and Singapore. He introduces Singaporeans to the art of binchotan, a Japanese technique that consists of smoking dishes with charcoal. Set in a tunnel hall, along the 35-seat bar, you watch the chef work before your amazed eyes. Sleek and technical dishes reveal unsuspected notes: sea urchin, caviar and corn cream, edible charcoal surprise, and even smoked chocolate mousse.
