DOMAINE DU FONTENAY

Winery

Isabelle and Simon Hawkins offer their wines to the old Du domain. The tradition in the Tradition of the Gamay grape reflects the traditional style of wines in the region: perfect wine of thirst, pleasure, rolling, without aspérité with the special contribution of the Domaine in the old wine-making of a wine of a natural land. La Cuvée À l'Ancienne, this rosé is at the opposite of the traditional "lively" rosé rose from gamay. After selecting a parcel with optimum maturity, the grapes are picked up and destroyed in order to release the aromas. They are left in for a few hours to promote the juice/film exchange. La Cuvée Vine de Saint-Sulpice, the only producer in Côte Roannaise to own vineyards on the granite butte of Saint-Sulpice. The rock is on the surface and this geology gives its originality all its originality. La'represents at the end of a wine that reflects its land and its vintage. A long maceration of approximately 20 days is followed by a breeding which has as its objective the work of the tannins and the reduction/oxidation equilibrium. Bottling is done when the wine is ready, usually early in the summer.
