The head of the Olives is a knight of the Brotherhood of the Knights of the Olive Tree. This means that it particularly highlights Nyons' flagship product, whether in its daily menus or for special occasions. The Alicoque one is the ideal time to taste the black PDO olive in all these states. Some examples of its specialities: crispy goats spread with Nyons black olive cream, and duck foie gras escalopes breaded with sesame seeds and fried, macaroons with Nyons black olive cream, celery mousseline, port and vinegar juices, rabbit leg casserole, coriander, honey and vinegar simmered pink berries, melt-in-the-mouth potatoes with thyme flower.
