Michelin-starred chef Olivier Alemany cooks with the finest Provencal produce, according to the season. He brilliantly revisits classics, with signature dishes such as crispy calf's head in ravigote sauce or roast squab with blackcurrant berries. Creatively, he wows the palate with a waffle and pearly egg with summer truffle as a starter to a summer menu, and the roast duckling with apricots that follows is a sweet confit, to make the transition to a platter of cheeses from local producers. Delphine, his wife, welcomes you and makes the experience a pleasant one.
