In the 18th century, the town of Solliès-le-Pont began to develop. The town took on a strategic importance, thanks to the construction of several dams which made it possible to operate numerous oil, wheat and tanning mills. Thanks to an important network of canals, favouring the irrigation of more than 400 ha of agricultural plain, Solliès-Pont will become little by little the capital of the cherry, then of the fig. Even today, the Solliès fig represents 75% of the French production marketed; since 2011, it is even recognized PDO at the European level. Every summer, the village comes alive with the Festival du Château.
