This Byblos hotel restaurant, located on the poolside terrace, offers refined and sustainable Mediterranean gastronomic cuisine. Chef Nicola Canuti works with local producers and benefits from the richness of the hotel's agroecological permaculture garden, located just a few steps from the restaurant. The menu features a range of more than 20 dishes between land and sea, savory and sweet, with Mediterranean accents. The dishes are available in different versions, with a play on textures, seasonings, flavors and colors.

Chef eccezionale, ogni piatto ha soddisfatto la nostra aspettativa, da venire ogni volta che si viene a st tropez, provato anche il ristorante a mare e cucina byblos, sempre altissimo livello, complimenti alli chef e alla sua squadra

La cliente est arrivée. Je pense qu’elle a apprécié mais la réservation n’était pas pour 4 comme je l’avais demandé mais pour 2. Heureusement très réactif

Nous avons mangé à 7 personnes, Très bon accueil, avec une chef de rang très sympathique. Un repas à la hauteur de nos espérances, un vrai régal. Par contre, un sommelier qui n’apporte aucun conseil, inexistant, arrogant, manquant à ses obligations.
