The medieval city, surrounded by ramparts, is a former commandery of the Knights Templar. After the great trials of the Order of the Temple in 1308, the building, now private property, was taken over by the Hospitallers who remodelled it in the 14th and 16th centuries. It was transformed into a prison during the Revolution. Montfort is the birthplace of Joseph-Louis Lambot, inventor of reinforced cement. It was he who first had the idea of incorporating an iron reinforcement into the thickness of the concrete to give it greater resistance to deformation. His first work, a reinforced concrete boat, can be seen today at the Musée du Pays brignolais in Brignoles.
