The medieval city, surrounded by ramparts, is a former Templar commandery. After the great trials of the Order of the Temple in 1308, the building, now privately owned, was taken over by the Hospitallers who remodeled it in the 14th and 16th centuries. It was transformed into a prison during the Revolution. Montfort is the birthplace of Joseph-Louis Lambot, inventor of reinforced cement. He was the first to have the idea of incorporating an iron reinforcement in the thickness of the concrete to give it greater resistance to deformation. His first achievement, a boat made of reinforced concrete, can be seen today in the Musée du Pays brignolais, in Brignoles.
