In a former oil mill, this hotel-restaurant welcomes you in a typical Provencal setting. Chef Alexandre Dimitch's cuisine, made with fresh products, pays homage to the terroir: octopus a la plancha and its risotto with rocket pesto and marinated peppers; swordfish pavé a la plancha, aubergine caviar and mozzarella di bufala and basil emulsion; pan-fried duck breast, celery mousseline with truffle oil and poached pear... but also tarte Tatin and yoghurt ice cream. Aups being the capital of the truffle, you will also find it on the menu!

In season: every day for lunch and dinner. Out of season: closed Monday evening and Tuesday. Menus from 28 € to 36 €. Lunch formula : 12 €. Wine by the glass. Home made. On order 48 hours in advance, bouillabaisse, bourride. Groups welcome (15 people maximum). Garden. Terrace.
