In a former oil mill, this hotel-restaurant welcomes you in a typically Provencal setting. Chef Alexandre Dimitch's cuisine (Bib Gourmand), made with fresh products, pays tribute to the land and the Mediterranean. Octopus a la plancha risotto with arugula pesto and marinated peppers; crab tartar guacamole gambas a la plancha tomatoes and lemon pearls; pan-fried duck breast with celery mousseline in truffle oil and poached pear. Aups being the capital of the truffle, we find it on the menu! A seductive wine list. Cooking workshops, catering service.

In season : every day for lunch and dinner. Out of season: closed Monday evening and Tuesday. Menus from 28 € to 36 € (summer truffle menu from 45 to 57 €). Lunch formula : 12 €. Wine by the glass. Groups welcome (15 people maximum). Garden. Terrace.
