Located in the heart of the Alpilles on a rocky plateau, Les Baux offer an exceptional panorama. Les Baux-de-Provence is the power of a citadel perched on a summit; the strength of the rock that the elements have sculpted over the centuries and the resistance of the stones that withstand the onslaught of the mistral. The castle is of course the centerpiece of this extraordinary place. One can easily understand, in view of its location, the strategic thinking that guided its construction from the 11th century: any approaching enemy was easily spotted... Dovecote, dungeon, troglodyte houses, siege machines, one wanders with happiness in the maze of these testimonies of another time. Vertigo is forbidden, so much one feels fragile at the top of the highest tower! Patiently restored, the village is not left out, and has a historical heritage of a rare beauty. Church, castle, town hall, hospital or chapels are all masterpieces to discover. Quiet in winter, teeming in summer (beware, it can be very hot in the cobbled streets!), it is true that the village is almost closer to a museum than to an authentic Provencal village, but its charm is still worth the detour. The visit is exclusively on foot among the old houses with beautiful Renaissance facades and private mansions. Among the latter, don't miss the Manville hotel, now the town hall, built in 1571. Finally, Les Baux is home to a gastronomic monument: the Oustau de Baumanière, headed by the chef Glenn Viel, which proudly wears its three stars.
