The only cheese dairy in Aix to have its own maturing cellar. A stone's throw from the market on Place de la Mairie, Sylvie Savelli offers more than a hundred fresh or very mature cheeses, in all types of paste and milk. All tomes and goat cheeses. Il propose des fromages incroyables : j'ai pris jeudi un isigny cendré, une tomme au marc de raisin et un brebis corse qui sentait le sous-bois.
