The Chef offers a menu that changes with the seasons and whose identity is Mediterranean: roasted St. Peter's Day aiguillettes, broccoli mousseline, asparagus and shellfish juice; pan-fried cod back skewered with Chorizo, artichokes cooked like a stew; herb-crusted rack of lamb, candied eggplant and gratin; simply pan-fried veal quasi, candied shallots and coconut bean mousseline; carnaroli risotto with shellfish. Hotel side..

Saint Paul's is also an atypical establishment. Formerly called La Maison du Séminaire, it used to house a religious teaching college and then the Grand Séminaire, a treasure hidden on one of the most beautiful sites in the city. The building now stands proudly facing the Mediterranean: you only have to cross the street to take a swim in the sea. The setting is ideal and combines the calm of the area with the proximity of the heart of Nice, easily accessible even on foot. The rooms with sea view are obviously the most charming. The higher you go upstairs, the wider the view. We also like to have breakfast in the sun on the beautiful terrace overlooking the sea where a rich buffet is served every morning

2017 will be a year of renewal for Saint Paul, who has been undergoing complete renovation work for several months. These will be spread over 2 years with a break during the summer season.
