Soubeyran is well known for the great variety of its pancakes which are excellent. The quality/price ratio is just as important. You can choose from about sixty salty or sweet pancakes. Meat lovers will fall for tartar (raw meat, egg yolk, olive oil, garlic and parsley) while others will share a Provençal one (zucchini, garlic, parsley, fresh cream and cheese). On the sweet side, it's not bad either with Africa (almond cream, hot chocolate) or Normandy (grated apple, fresh cream, calvados). The most: a wide choice of mixed salads.

The slate of the day varies according to the mood and envy of David, the chef. Depending on the season, hot goat cheese salad with bacon and noix ; 2 Frères burger with chips maison ; tagliatelle gorgonzola cured ham... when others will prefer grilled meat from France such as this 900 gram rib of beef for 2 personnes ; or this leg of lamb from Sisteron. Remember that all sauces are homemade. Among the desserts: a small dessert pizza or a fiadone. You will be seated in a warm atmosphere with a wood oven or on a sunny day on the pleasant and large terrace. The plus: the whole card is available to take away. We come and come back with our eyes closed!

Among these every day a meat or fish with its garnish (beef, veal, seafood, prawns, scallops, sole, sea bream, sea bass...). Among the specialities à la carte: risotto con gorgonzola e noci, raviolini crema al formaggio et funghi, pizza fiorentina (tomato sauce, cherry tomatoes, basil and arugula), gratin di gnocchi al bolognaise. The decoration is superb, all in wood, leather and cork, warm and tasteful like the reception. Special mention to the very cosy terrace. The wine list served by the glass offers a beautiful range in three colours of local wines but also of great French wines. The cellar offers you for sale to take away more than 250 references of wines from various regions of France. The servers are happy to help you choose them. The restaurant side offers plates of cheeses, fine quality deli meats, salmon and a revisited burger menu: try the Southwestern foie gras plate or the truffle ham burger. You can also enjoy delicious squeegees and fondues, such as the one with mushrooms, that you ordered the day before or the very morning. Themed musical evenings are organised on an occasional basis. The plus: the wines tasted are on sale to take away as well as some boards of delicatessen and cheese.
