Under Charles X, Coarraze had the ambition to become the capital of the canton. Petitions and claims did nothing about it and it was in 1864 that, by law, the commune of Saint-Vincent was effectively created, whose name came from the patron saint of the church of Coarraze. At that time, there were 600 inhabitants, a figure that has now almost halved. For the anecdote, it should be noted that until 1970, the carrot of Saint-Vincent was famous and was found in all markets. Today, with the emancipation of the agricultural world, there is only one property left that continues to work the now rare carrot, it is Ferme Pibouret that continues to sell it on the spot and at the markets, with many other vegetables.
