La Chocolaterie de la Couronne is a famous sign in Pau, refined and multi-awarded since 1953. Although it has not been able to welcome many crowned heads, it has nevertheless seduced great men such as General de Gaulle, who was particularly fond of Créoles, a ganache with fine champagne and dark chocolate. Le Pastis d'Amélie is a pastry that pays homage to the traditional Béarn cake. The story begins with the love affair between Pierre Larquier, a cabinet-maker from the Landes region, and Marie-Amélie Baradat, a talented Béarnaise cook. Jean-Louis Larquier, Amélie's grandson, rediscovered the recipe and spent ten years rediscovering the authentic flavors of yesteryear. Making pastis requires over 48 hours' work and meticulous attention to detail.
