Renovated into a fully-fledged cheese factory, this cayolar situated at an altitude of 1,000 m, above the Holzarte gorges in Larrau, allows four farmers from Mauléon, Moncayolle and Barcus to produce one tonne of cheese per year, i.e. around 400 pieces of pure ewe's milk cheese, labelled Ossau-Iraty. All around the farm is an area of 60 hectares where flocks graze in summer pastures and are fed with dry fodder, hay and cereals (corn, etc.). At the farm, the PDO cheese made from raw milk weighing 2 to 5 kg is sold directly to local and visiting customers.

At the summer hut open from May to October, from 9am to 1pm, at the farm, 7 days a week from 10am to 12pm and from 3pm to 7pm.
