Chef Bruno Cornu prepares an inventive menu, featuring generous dishes based on fresh, seasonal produce. On this day, guests could enjoy marinated scallops or crispy quail with butternut in two ways, followed by pollack with fennel mousseline, or Challans duck à la royale.
