In the 18th century, Parnay was almost completely assimilated into Saumur: the commune was entirely dependent on its bailiff (sent by the king to manage provincial affairs) and its salt storehouse. However, it has managed to keep its own identity and independence, thanks to a unique know-how, essential in this wine-producing region: grafting. This process, allowing the reproduction of vines at a time when disease was ravaging the vineyards of Anjou, was introduced by Antoine Cristal at the end of the 19th century. He even built a school near the Château de Parnay, known as Clos d'entre les murs, to teach this revolutionary technique.
