The Saline Ceviche bar restaurant is a culinary voyage between dishes from the Basque Country and elsewhere. A Peruvian speciality, ceviche cooks raw fish by marinating it in a sauce with lemon, allowing it to cook. The fish on the menu comes from the Saint-Jean-de-Luz fish auction, with fresh produce that varies according to arrivals. Poke bowls are available: Hawaiian, Tahitian or Californian, with a choice of salmon, white fish (or tofu) and several sauces. One of the first Ceviche-bars in France!

I took the Ceviche Tuna. The flavours were muted because the dish was as cold as the fridge. Cold ceviche is not ideal.
The Pina Colada and service were good.
