Restaurant with a menu featuring a choice of fresh and seasonal products from the chefs
For Ingrid Deffein and Guillaume Decombat, chefs and creators, the most important thing is to go to the source of the products. Sources was an obvious choice for this neo-bistro in Nantes. Alongside the exposed stonework, there's a counter where a dozen or so place settings are set out on a wide wooden body. Then, on the restaurant side, seasonal flowers are on the tables. You'll be seated in Ecotel chairs with backrests stamped Gustave, Camille, your first name? For lunch, the menu offers a choice of fresh, seasonal produce. Vegetables, fish or meat. And in the evening, plates take on a gastronomic air. Escape with the five-step blind chef's menu, where the sommelier whispers a beautiful food and wine pairing to curious palates. Gros coup de cœur sur la laitue braisée à la grenobloise en entrée: tous les éléments se mariaient à la perfection! J’ai rarement été emballé à ce point par un plat si « végétal».
