This craftsman, whose workshops can be visited in Espelette, perpetuates a chocolate-making tradition that began over 400 years ago in the Basque country. Since then, Espelette chillies, cherries, Izarra Vert and Salies-de-Béarn salt have been blended with pure cocoa butter chocolate to create new flavours. Chocolate is treated with exceptional care, combined with the aromas of the South-West region. Here, it's all made-to-measure, as you can compose your own ballotin or "paniers garnis"...
