Chez Raux is a must-have pastry shop whose reputation has been forged by Basque cakes and lemon or orange cakes. It is also a space upstairs for lunch. The room is spacious, plunging into the dynamic Les Halles district, where the square has been completely redesigned and is now pedestrianised. Under the bell, you will discover strips of savoury tarts that are not only a delight to the eye but also to the palate: smoked salmon, Andalusian, merguez, chorizo, peppers... Sold by the slice, they are filled on Sundays with "crazy pies" and there, inspiration is there! Their sweet version is in the same spirit and for salad lovers, who also love salads, the shrimp and citrus fruit version is an excellent fresh moment. You will also find daily dishes that vary with the market, from homemade paella to sausage rougail, the days only follow each other in good taste. Lionel Raux has set up a second site, the Technocité district, which is in full development and which sorely needed a place to eat, with a drive (the first of its kind in the Basque Country...). Salty or sweet or both at the same time, it is the happiness of gourmets.

Nous avons réservé le dessert du repas de noël "l' écureuil" pour la deuxième fois. Nous n'avons pas été déçus. Très grande qualité de chocolat et ingrédients. Léger et élégant. Il tient sa promesse. Incontournable à Bayonne et bien placée ce qui ajoute au plaisir.
