The Mendiburu family, who specialize in dairy production in Bardos, have started making their own ice creams and sorbets. While they make classic flavors (chocolate, caramel, hazelnut, rum raisin, etc.) directly on their farm, these atypical ice-cream makers also offer their own creations: Patxaran ice cream, cherry and crème fraîche ice cream, cucumber sorbet, raspberry-lime-Espelette pepper sorbet, crème brûlée omelette...

Bastidarra makes artisanal yogurts, desserts and dairy specialties from cow's, ewe's and goat's milk, known under the Ibaski and Ekia brands. They are made with fresh milk from 8 associated farms within a 15 km radius of the dairy, using only natural flavors. In the boutique, you'll find the full range of these yogurts, as well as products from local farmers that can also be found in supermarkets. A fine showcase for the terroir and know-how of artisan producers.

Christian Montauzer, a worthy descendant of a house that has made "home-made" its trademark since 1946, works with his team to hand-craft ancestral recipes. The boudins, cured meats, pâtés... are sure to delight even the most discerning customers. Between the secrets of production and the seasonings, another jewel can be found at Maison Montauzer: the "Ibaïama" ham, born from pigs raised in the mountains, prepared according to tradition, and cured by the air of the Basque Country for 4 seasons. Claire, young and passionate, raises alpine goats and makes her own cheeses - crottins, bricks, logs, little palets... - And here, no intensive breeding; the 50 adorable goats and kids are pampered and fed mainly with hay and pastures from the family farm.
